| Ingredient: Pasta - Home made  Category: Pasta & Noodles  Season: All  It is very hard work kneading pasta, and then you are faced with a lump of very resilient, elastic dough which needs to be rolled and stretched out to a transparent thinness!  It can be difficult too, to obtain the correct ingredients (although a strong flour will do).  If you want to get really serious about home-made pasta you could, of course, invest in a pasta machine. It’s a sort of mangle which can be adjusted to different pasta shapes, and it squeezes and presses the pasta out thinly, which does eliminate a lot of hard work.
