Ingredients:
125g/4ozs Medium and fine Oatmeal mixed
2 tsp Fat (Lard )
Pinch Bicarbonate of Soda
Pinch Salt
Hot water to mix
Makes about 16
The traditional way of cooking Oatcakes is on a Gridle, but they can be done in an oven.
The rolling and cutting has to be done very quickly for if it cools the paste becomes very difficult to work.
Don't try to make large amounts of dough, to do larger quantities just repeat the process until you have the amount required.
Method:
Mix the meal with the salt and bicarbonate.
Pour in the melted fat (lard) and mix in.
Add enough hot water to create a stiff paste.
On a floured board roll out, either into a circle and cut into quarters, or into a rectangle and cut into triangles.
Place on the hot gridle or in a medium oven 190 C / 375 F / Gas mark 5 until just browned at the edges.
