Rock Cakes
Rock Cakes are an absolute tea-time stand-by. This recipe is in-expensive and easy to make and delicious to taste.
Ingredients:
(8oz) self raising flour (or plain flour
(1 tsp) baking powder)
Pinch salt
(1 tsp) mixed spice
(4oz) margarine
(3oz) caster sugar
(3oz) dried fruit
1 egg and a little milk
Method:
Sieve flour and salt into bowl and rub in fat.
Add sugar, fruit, spice, beaten egg, and only enough milk to make stiff dough
Place in required portions on greased baking sheets.
Bakein oven at
425°F for 15-20 mins
Serves 4-6
